The dissertation is devoted to research the influence of specific surface of hydroxide of calcium of limewater on his physical and chemical properties, process of cleaning of diffusive juice that quality of the cleared juices. The scientifically substantiated using of water-lime suspensions with a specific surface it hard phase, that allows to improve the effect of processes of cleaning of diffusive juice, avoid complications at the station of filtration and improve the highquality indexes of the cleared juice. The temperature conditions of burning-out of limestone are experimentally set with the purpose to receive the lime with the rational range of specific surface him hard phase.
