The work is devoted to the actual question of improvement of extracting of saccharose from the beet shaving, improvement of technological quality of the diffusion juice, rising of output of sugar, reduction of losses of saccharose from microbiological decomposition during extracting of saccharose from the beet shaving. On the basis of the experimental researches there are many developed methods of application of following preparations: “Gavel-cleyd” (active chlorine); “Biodez”, “Polidez” (polyhexamethylene guanidine hydrochloride); “Biovit” (forage to the antibiotic the chlorine of tetratsiclinou) during extracting. The method of preparation of nourishing water is developed and applied in industry for the process of extracting of saccharose from beet with the use of basis sulfate of aluminium (patent Ukraine № 58320). The use of basis sulfate of aluminium allows to get diffusive juices of high quality and multiplies the output of sugar.
