Essay

Object – production of highmaltose syrups from a corn starch. Purpose – improvement of production of highmaltose syrups on the basis of experimental researches of kinetics of starch saccharification with the help of a complex of a amylolytic enzyme preparation and use of high-performance way of cleaning hydrolyzates using flocculants and natural sorbents. Methods – physicochemical, analytical, chromatographic, photocolorimetric, spectrophotometric, microscoping; mathematical modeling calculated with the help of a modern computer technology. Novelty end results – development of mathematical models of technological processes of saccharification of starch hydrolyzates to maltose and its cleaning from insoluble substances, determination of optimal parameters for these processes. Technological conditions of decolouration of highmaltose hydrolyzates by active coal are improved. Method of producing glucose pomade, highly saccharificated syrup, instrumental technological scheme of producing highmaltose syrupsand a progect of a technological normative documentation for this product are developed. Penetration – pilot tests of technology of a highmaltose treacle were run at Zvyaginskii starch plant, usage of highmaltose syrups in producing of cream candies at PE “Delitsia” and scalded types of bread at “Kievhleb” ”Hlebokombinat #2”, economic effect – 102000 UAH per year; sphere – starch-treacle..
