Essay

The thesis is devoted to the scientific grounds of forming of assortment, development of composition and commodity science estimation of new combined extruded products, usage of nontraditional raw materials (for this type of products). Five new compositions of extruded products (sandwiches and pillows) are developed by the mathematical modeling and experimental researches. Efficiency and advisability of usage of wheat embryonic flakes, egg-shell powder, dill and parsley extracts, cikorlaktus in their composition are proved. The increase of content of indispensable amino acid, indispensable of fat acids, vitamins, mineral substance, and lengthening of shelf-life, by the entry of natural ingredients are indicated. Conformities of quality changes of the new combined extruded products depending on influence of antioxidants, terms of storage and type of packing are determined. A normative document on the new products is developed and approved their industrial introduction and the use of them in servicemen nutrition are carried out.
