Essay

The dissertation is based on the wide archives sources and research's the formation and development of confectionary industry (second half of XIX century-30-th years of XX century). The periodization of the initial stages of the development of this brunch and the classification of confectionary enterprises in the second half of XIX century was elaborated. The especial features of the development of brunch by the period of NTP( “new economical politics”) and “industrialization” have been research also. The problems of technology and equipment were under subsequently consideration. The comparison of the brunch development’s by the west and south-east Ukrainian territories, that differ on the base of the historical circumstances, have been made. The grate attention was devoted to the persons which activity lead to the formation of some directions of confectionery’s brunch development – George Borman, Clementine Avdicovich-Glinska, Valentin Efimov. The specific of confectionery brunch and its place in general historical process have been analyzed.
