Essay

The dissertation is dedicated to the development of new technology units for long-term storage of pears using antioxidants. The antioxidants influence on quality and intensity of oxidation-reduction processes in pear fruits during preservation has been studied. It was established that postharvest pear treatment with the combined antioxidant preparations allows to increase storage life, to save maximum nutritional and biological value and ensures ecological safety of the productions. Proposed storage technology has been introduced into commercial enterprises use. Economic efficiency data are cited.
