Essay

The dissertation is dedicated to the development of new technology units for tomato fruits storage with antioxidants use. Complex antioxidant compositions for pre-harvest tomato fruits processing that can prolong their storage without significant loss of quality and nutritional value are developed and substantiated. The compositions influence on commodity quality, weight loss, the level of microbiological and physiological affection, change the main components of the chemical composition of tomato fruits during storage are studied. Proposed storage technology has been introduced into industry, economic efficiency data are cited.
