Essay

Dissertation is devoted to the problem of consumer properties, quality and safety of fancy cookies. Experimentally established and proved optimal quantity of flour and flax seeds, ground grape seeds, ground chicory root, powdered hibiscus flowers and Verb scum densiflorum Bertol, skimmed milk, dry whey used in recipes of fancy biscuits. Were created qualitatively new kinds of fancy biscuits without and with fillings, which are enriched multifunctional, biologically applications that make the reduced energy value of products achieved consumer needs in scarce nutrients. Studied the influence of packaging materials and prescription on changing of fancy biscuits with improved composition during storage. Is set the high efficiency of packet made of metafanu in order to slow down process of oxidation and hydrolysis of fats in developed new fancy biscuits. Developed and approved documentation for new kinds of fancy biscuits Lyonok, Temptation, Blue Rhapsody and delicious sun. Received patents for utility model № 35281, № 35285 and № 35286.
