Essay

Theoretical substantiation of the biological value of the fruit of cornel by its identification and definition of the concentration of fenol and aromatic substances and amino acids. The effect of preliminary treatment of fruit and their pulp on the degree of extraction of the biologically active substances into juice and extract is shown. Organoleptical and physical - chemical indicators of juice, extracts, wine materials, native cornel wines and those mixed with pear wines are studied.
