The thesis deals with scientific rationale and development of the advanced technology of malt production with the use of water exposed to non-equilibrium contact plasma. The research establishes significant influence of plasma activated water on the processes occurring in the grain material during its germination. It was found that usage of water exposed to non-equilibrium contact plasma promoted acceleration of biochemical processes in the germinating grain. Physical-chemical and biochemical processes occurring in the malt grain are investigated, and considerable acceleration of growth processes is demonstrated. The paper establishes the peculiar features of adsorption processes in the grain material during usage of plasma activated water.
