Essay

Dissertation is devoted development of methods of leadthrough of preliminary defecation with the use of additional chemical reagents. In-process it is first suggested to use the sulfate of aluminium jointly from 10-20 % diffusive juice, that allows to improve the indexes of technological quality of the cleared juice and syrup, improve the lauter-sedimentation indexes of sediment of juice of I saturacii. Influence of coagulant of basic sulfate of aluminium and flokulanta PGMGKH is scientifically grounded on the pectin matters of diffusive juice on the stage of preliminary defecation.
