Essay

Dissertation work is provides theoretical basis and new solving of scientific problem to evaluate the quality of various terms of apples ripening for juice production due to short-term storage. It is established a mathematical relationship between the structural and mechanical, physical properties and yield of apple juice and a sign indicator for the latter-the physical density of the fruit. It is determined by the chemical composition, structure and mechanical, physical properties, anatomical structure of 14 varieties of apples late ripening period juice yield, its quality and suitability for the production of high-quality juice. It is grounded duration of twenty short-term storage of apples late ripening period for the efficient production of high-quality juice. It is determined the influence of apples ripening period, their storage time on the yield and quality of juice in the production environment. It is proposed the technology of apple juice tonic production with the addition of 5 % schisandra juice and estimated its quality. Economic evaluation demonstrates the high efficiency of high-quality apple juice and apple juice tonic.
