Essay

The dissertation is devoted to the task of expending the range and forming consumer properties of national structure forming substances for trade and fish industry by reasonable use of secondary raw fish of tolstolobik. Based on a systematic analysis of the current state and prospects of aquaculture of Ukraine and market of structure forming substances of producing domestic competitive structure forming substances based on secondary raw fish of tolstolobik was determined. Scientifically substantiated and experimentally confirmed laws of formation and stabilization of consumer properties of structure forming substances based on secondary raw fish of tolstolobik were proved. Through experimental studies using mathematical modeling techniques and sensory analysis ingredient composition of structure forming substances based on secondary raw fish of tolstolobik was optimized and microbiological and toxicological safety of new products were proved, nutritional and biological value researched.
