The thesis is devoted to the theoretical and experimental identification of patterns of the complex effect of natural plant aromatic components from pine needles in the form of an extract on the formation of consumer properties of craft beer. Scientifically substantiated and developed a new way of obtaining and enriching carbified unfiltered beer enriched with natural plant supplement from non-traditional plant material (extract from pine needles) with antioxidant properties.A comprehensive commodity assessment is provided for developed craft beer, enriched with phytocomponents from pine needles, which is from the traditional (with hops), it has a high content of natural plant biologically active substances, such as low and high molecular weight phenolic compounds, aromatic substances. This allowed not only to increase the biological value of a new beer, but also to extend its shelf life twice. At biological objects, the negative effect of the developed beer on the organism has been shown to decrease and it is found that it has antioxidant potential and is able to protect the liver from the negative influence of alcohol in its composition. The normative-technological instruction for a new product has been developed and approved, and the patent of Ukraine for the utility model has been obtained. Data on the social and economic efficiency of new products are presented. Research results are introduced into the production and educational process.
