The thesis is devoted to the disclosure of theoretical discourse on the formation and structuring of the global organic food market during the period of economic, social, ecological, technological changes. The author proposes an author's interpretation of the global market for organic food products, shows the evolution of the global organic food market, identifies the levels of institutionalization, systematizes mechanisms and tools for stimulating the development of the global organic food market. The parameters of identification of organic production are determined and the market is structured according to the product, geographic and object approaches. The dominants of the formation of the global organic food market in the postindustrial period are determined. It is established that the global organic food market has asymmetric development, which allowed to establish a significant gap between demand and supply; disproportionality of the geographical structure of production and consumption; information asymmetry. The strategic directions of development of production and export of organic food products of Ukraine are grounded and scenarios of market development are designed.
