Essay

The dissertation is devoted to the development of hop processing, technology for brewing for the best use of its valuable substances. In this work the thechnological modes are reasonable substantiated and the sulfitation methods of the dried hop and non-drier hop processing, and also storage in a medium of sulfrous anhidride are offered. The method of electroprocessing of non-dried hop by a current is also developed that enables not only to save excellense of hop during a long storage, but also the most competely to use valuable substances necessary for hop brewing, bitter and poliphenol combinations, ether oil. The worked out incessant - funetioning plant and method of hop preparation for brewing with help of sulfurous anhydride and electroprocessing were acknowledqer as inventions.
