Essay

In dissertation submitted to the theoretical and experimental justification for the new approach to veterinary-sanitary control, which is based on the assessment of microbiological risk using official and industrial microbiological criteria to manage risk in the production of cow's milk. Also in the research work presented a new direction in food microbiology as predictive microbiology by using a computer program and modeling. For the first time in Ukraine, isolated and identified from the raw milk of cows new opportunistic microorganism - bacteria Enterobacter sakazakii, formed its microbiological profile, and organized official deposit its in the collections of the National center of strains of microorganisms at the State scientific monitoring of the Institute of biotechnology and the strains of microorganisms. Theoretical and experimental justification microbiological risk assessment Enterobacter sakazakii during production of raw cow's milk with studying of the prevalence of microorganisms family Enterobacteriaceae including Enterobacter sakazakii in milk, on object of the dairy farm and development prediction modeless of the behavior Enterobacter sakazakii in raw milk during keeping and transportation its cooling. A set of modern microbiological risk management tools for Enterobacter sakazakii during production of cow's milk using the Performance Objectives (PO) and Performance Сriteria (PC), which can used manufacturer of milk and official l veterinary service. Experimentally determined the need to use the values of the number of micro-organisms in the family Enterobacteriaceae in milk cow's sites as indicators of the level of sanitation at dairy farms
