In the conditions of fierce competition and rapid development of innovative technologies in order to increase the profitability and efficiency of the food industry, a scientific approach to the strategic management of innovative development of production is needed. The purpose of strategic management of innovation processes at the enterprise is to study the scientific theoretical foundations, methodological provisions in the development and implementation of innovation strategies at all stages of the life cycle of goods, works and services. Successful innovation of any enterprise depends on a clearly defined mission, goal, analysis of internal and external environment, defined strategies and control over their implementation, to identify reserves for more efficient use of all available resources, increase competitiveness, improve financial results management projects. It is the bakery industry that produces the most popular food products that suffers from the insufficient development of innovative support, which requires special attention. The scientific novelty of the obtained research results lies in the substantiation of theoretical and methodological aspects and the development of practical recommendations for the formation of mechanisms for strategic management of innovative development of enterprises in the bakery industry.
