Dissertation has been elucidated to a revelation of Cucurbitaceae optimum pretreatment's methods before freeze with purpose to improve the start properties and to stabilize consumer properties.Dissertation contains the results of experimental research of physic-chemical, biochemical fnd microbiological processes during freezing and long-term storing in a cold store.During the making of dissertation has been worked up the 5-mark system of quality's estimation for frozen Cucurbitaceae and mathematical models of quality rate's comparison in depending from pretreatment's methods, and reveled the defrjsting methods influence for consumer properties of final products.
