Essay

The dissertation is devoted to a commodity researchestimation of meat and an offal received in adverse ecologic-epizootic conditions. The ecological estimation of agrarian complex of Vinnytsia regionin aspect of reception of commodity meat is carried out, cards - circuits of zones of man-causedepollution of Vinnytsia area are made, the probability of reception of dangerous meat products as a food in adverse conditions is shown. Influence of small dozes of radiation on consumer properties of meat of hens and an opportunity of its long storage is investigated. Food value and safety of the beef meat received from large horned livestock, infected by a tuberculosis is evaluated. The express - method of microscopic revealing of the activator of a tuberculosis in meat products which enables to reduce duration of researches up to 1-2 hours whereas according to the standard technique 30 - 90 days are necessary - is developed.
