Object - an estimation of new colouring agents - biologically active supplements from beet-root in the form of fine-grained powder. The purpose - the possibility and expediency of applying vacuum drying, microwave treatment and "fine" grinding (without refrigerating) which result in the effect of final pro-duct "enrichment" is demonstrated.. Methods - standard chemical, biochemical, microbiological. The novelty - on the basis of this powder together with imported phytosupplements from natural spices (cinnamon, cardamom and others) new fat-containing confectionary and mixtures for milk cocktails with the potential immune-modulating effect are developed. The results - are developed scientifically proved technology. Introduced - in industrial activity SPC "FIPARР", SPC "RAMON", АC "FITORIYA". Branch - food-processing industry.
