Object - selection of initial of maize behind the basic technological parameters at selection of hybrids for the food industry. Aim - the estimation and the selection of flint initial maize material at selection of hybrids for the food industry. Methods - hybridization, field tests, measure weight, technological, genetic, statistical. Novelty - for the first time in Ukraine features of technological properties of initial material of maize which use for manufacture of groats are established and their dependence on a consistence endosperm is established. Physic-mechanical traits of maize kernels that define the output of groats of different fractions are studied. For the first time it is established character of the genetic control of a consistence endosperm and maintenances carotenoids in kernels of lines and hybrids of maize of different subspecies. Results : it is offered a perspective initial material for selection of hybrids with flint and semi-dent a consistence of kernels for needs of the food industry. The best hybrids behind parity of quality and crop, and with the raised maintenan ce carotenoids are allocated. Sphere of use - agricultural.
