The Object: quality of fresh cultivated field mushrooms at storage in the conditions of the modified gas environment. The Purpose: a scientifically-experimental substantiation of a keeping of fresh cultivated highly productive straines of field mushrooms in the conditions of the modified gas environment for longer and their qualitative storage. The Methods: physical, chemical, organoleptic, settlement, modelling and correlation-regressive analyse, mathematic-statistical.It Is Offered: kinds of the packings promoting creation of the modified gas environment in limited space, for storage of fresh cultivated field mushrooms in the conditions of the industrial and trading enterprises are offered.
