Dissertation is devoted a scientific ground and development of compounding composition of functional compositions which are entered to the candies for adequate indemnification of physiology charges of organism of sportsmen during stress physical loadings of different intensity. The criteria of optimization of formed will make candies for sportsmen. On the basis of mathematical design and as a result of experimental researches certainly optimum compounding composition of candies, which provide high high-quality descriptions of the prepared products, their stability during storage. The complex commodity expert estimation of consumer properties of candies is conducted for sportsmen and conformities to the law of their changes are set in the process of storage. Physiology efficiency of candies is set for sportsmen during stress physical loadings of different intensity. Certainly economic, social effect from a production and consumption, the competitiveness of candies is appraised.
