Essay

The thesis is devoted to scientific grounding, development and commodity expert estimation of soft drinks of the health order. The use of phytocomponents (water-alcohol extracts of Melissa (Melissa officinalis), St.John's wort normal (Hypericum rerforatum), Common hop (Humulus lupulus), Motherwort (Leonurus cardiaca ), and sugar syrup on the basis of Black elder fresh flowers (Sambucus nіgra ) for making of phytocompositions with anti-stress properties was grounded in the work. The developed composition is included in soft drinks prescriptions "Harmony" (on mineral water "Luzhansca-7"), "Apple Harmony" (on drinking-water with apple juice), "Grapes Harmony" (on drinking-water with grapes juice). The results of complex commodity expert researches of the drinks quality are presented in the work, that allowed to confirm the compositions and technological instruction. The changes of quality and safety of the developed drinks in the process of storage were studied and the guarantee terms of their storage are set. The technical terms on non-alcoholic drinks for the special dietary consumption are developed and ratified.
