3. The Object: natural apple juice (AJ), hydrodynamicly-activated flocculants (PEO, Praestol, Shtokopol) (GAF). The Purpose: using theoretical and experimental studies to determine perspective directions of increasing consumer properties, quality and safety of AJ by lightening and cleaning it with GAF. The Methods: physical – chemical, microbiological, biochemical, reological, organoleptical, original methods developed by the author, of systemic analysis and mathematical-statistical. It is Offered: formation of consumer properties of AJ during its lightening and cleaning with GAF; mechanism of increasing flocculating capacity of flocculants in conditions of turbulent lightening of AJ; innovation decision of using GAF to determine optimal regimes during lightening and cleaning AJ for improving its consumer properties and quality; means and equipment for commodity estimation of residue concentration of flocculants in AJ; theoretical foundation to form consumer properties of AJ lightened with GAF. Sphere of usage: food industries, scientific-research and design-engineering institutions, educational institutions.
