Essay

The dissertation is devoted to scientific substantiation of criteria for optimization of dry soluble products' for enteral nutrition of people with somatic diseases and injuries during the treatment and recovery periods nutritional composition. The products' for enteral nutrition classification with the application of facet approach, aimed for ensuring of the consumers' needs priority, is developed. A complex commodity science assessment of the developed products' quality is conducted. The regularities of parameters' changes under the influence of processes occurring during storage, particularly organoleptic, physico-chemical and microbiological, were scientifically proved. The experimental set High nutritional value (including energetically and content of essential amino acids, vitamins, minerals), satisfaction of target consumers' metabolic needs were experimentally established. Physiological effectiveness of new products for acceleration of human body's with somatic diseases and injuries recovery processes was confirmed through clinical approbation
