Essay

The dissertation is dedicated to explaining the nutrition problems of people, whose activities demand higher requirements to physiological organism reserves. Apart from athletes, such type of people includes numerous categories of consumers (personnel of police, customs officers and tax police officers, who are involved in operative activities, soldiers, surgeons, pharmacists, academics, salespeople, porters, builders etc.), whose activities are connected with increased loss of body functional reserves and long-term influence of static physical activity on the musculoskeletal system. On the basis of carried comprehensive researches there are justified the consumer properties, proposed manufacturing technology, proven the functional efficiency and safety of candies for people with long-term static physical activity containing L-carnitine and glucosamine. There are examined the consistent pattern of changes in candies' quality indicators under organoleptic, physical-chemical and microbiological parameters depending on the type of packaging, conditions and duration of storing, defined the storing terms, proposed product quality control methods and recommendations for the consumption of candies for people with long-term static physical activity. There has been defined the social impact from the introduction of developed candies which consists in their functional efficiency, which is manifested in positive action in the prevention of fatigue and diseases of the musculoskeletal system; stable safety parameters over a long shelf life for a wide range of temperatures; expanding the range of products for people with long static physical activities that is accompanied by symptoms of fatigue.
