Essay

The thesis scientifically substantiates formation of pastille quality products using stevia and elamin, and commodity characteristics of the developed products is given. Market research for the confirmation of the feasibility of Pastille products with the reduced sugar and fortified with iodine development are carried out. The possibility of using aqueous extract of Stevie, stevioside, elamine is implemented. Their rational concentrations are determined. Merchandising assessment of the developed products is carried out, the content of iodine is investigated, and glycemic index is calculated. Quality changes during storage are specified, the terms and conditions for storage of the developed products are fixed. The efficiency of using bioxalate-oriented polypropylene bags for products storage is proved. The degree of iodine absorption and normalization of the hormones involved in the regulation of blood sugar level while clinical testing is determined. Social and economic efficiency is proved, the quality of the developed products which were introduced into production and educational process was integrally assessed.
