Essay

This dissertation covers solution of actual problems of quality and safety assurance for quick-frozen fruit and vegetables with systematic management measures. It was scientifically grounded assortment forming, quality and safety of quick-frozen fruit and vegetables. It was grounded over strategy of systematical and process approaches, over observing of influence factors, over establishing of regularity of customer features variation. It was developed methodology of assortment forming, forming of quality and safety of quick-frozen fruit and vegetables over showed customer demands' significance tests. It was suggested hierarchical classification quick-frozen fruit and vegetables. Also it was established levels of classification indicators. It was cleared regularity of changes of chemistry contents of new kinds of quick-frozen fruit and vegetables. Also it was showed indicators of quality variation. It was developed procedure of control of storage conditions of quick-frozen fruit and vegetables in trade enterprise with developed quality indicators. It was scientifically grounded application of method of structural-functional analysis with establishing of quality control indicators and critical points of safety in manufacturing of quick-frozen fruit and vegetables. It was developed econometric model of quick-frozen fruit and vegetables' safety and quality management efficiency during manufacturing.
