The dissertation is devoted to theoretical and experimental substantiation of improvement of technologies of composting of food waste of restaurant economy with use of microbiological additives - soil extract and preparation "Baikal EM" for the purpose of acceleration of composting process and reception of a valuable product - compost. Waste recycling and conversion into products that are suitable for further use is one of the most important components of environmental protection technologies. The composting process is a biotechnological method of organic waste management and has a number of disadvantages, the main of which is the longevity of the process. The use of microbiological additives in compost mixtures will accelerate the composting process. Biotechnological methods of food waste management are productive and of considerable interest in solving the problem of food waste disposal of plant origin. These processes are subject to control and regulation, are implemented under normal conditions, are natural and have no adverse adverse effects on biota and the environment, do not require significant land, do not require the use of pesticides, herbicides and other alien agents.
