Essay

The thesis is devoted to veterinary-sanitary valuation of pork in case of gastritis, as this pathology of a stomach becomes widespread in pig-breeding. It was found, that chronic gastritis has a wide spreading among the total number of pigs of Ukraine (88-99%). In case of hard-expressed chronic catarrhal gastritis the degree of carcasses bleeding was satisfactory. The organoleptic, physical and mathematical parameters of meat become worse depending on complication of pathological process. In pigs'meat, suffered from chronic gastritis the content of moisture is increased, the amount of protein, fat and ashes is decreased, the calorific value of meat is reduced. Research into definition of the total content of greasy acids and aminoacids has shown, that there are less them is case of pathological process than in clinical healthy pigs. It was found, that the relative biological value of meat is reduced (22,0-30%) in case of pathological process. The similar picture is also observed by analysis of min eral content. The seeding of meat and internal organs with microflora is increased depending on a degree of pathological process.
