Musijenko M. Zoohygienis reguirements concerning getting the milk of a hight guality by the content of nitrates

Object of researches - chronical subclinical nitrate intoxication of cows. The propose of researches - to work out zoohygienic demands according to getting of from cows, which is useful in contents of nitrates for making ecologically pure milk products, separately, for children's food. The methods of researches and equipment - clinical, biochemical, hematological, chemical. The microscope BIOLAM hemoglobinometer, camera of Goryayev, refractometer, whizzer, cadmium's columns, set of chemical reactives. Theoretical and practical results: scientifically substantiated sanitary hygienic actions for getting milk with contents of nitrates ? 5 mg/kg. The correction of functional standard of nitrates in milk - 10 mg/kg (SSU 3662 - 97) on an offered standard - 5 mg/kg gives a possibility to take our demands according to the milk quality in accordance with the EU demands what will help of a realization of milk products of Ukraine in the European market. Novelty of inculcation: at the basis of veterinary sanitaryand zoohygienic researches it was experimentally proved that on the farms with law level of feeding cows during winter period in consequence of breaking the process of metabolism of nitrates by rumen microflora, it becomes winter chronical nitrate intoxication. The result of this is increased of nitrate level in milk from 10 to 20 mg/kg and more. The size of the nitrate contents in milk from clinically healthy cows (till 2 mg/kg) was scientifically proved. It was experimentally discovered that the availability of some quantity of nitrates in milk in the mast sensitive indicator of the chronical nitrate intoxication: till 5 mg/kg - a stage of decompensational patology. The scientifically proved conception of making the complex system of zoohygienic monitoring of nitrates in food, water and milk, appealed toprophilacte effectively nitrate - nitrite intoxication of cows was offered. The degree of introducing - it was elaborated zoohygienic demands according to the getting of milk which is nitrate contents for making of food products for children. The given demands are recommended for introduction in farms of Ternopil region. The sphere of using: the observance of offered complex system of monitoring of nitrates in milk cattle - breeding makes the real elaboration and introduction of concreate SSU.
