Object of research: carcasses of laying chickens-hens. Purpose of research: to study the sanitary-hygenic terms of maintenance and roughing-out of chickens carcasses in home gardens and farms, influences of them on quality, safety, food and biological value of meat. Methods of researches: sanitary-hygienic, microbiological, physical-chemical, toxicological and statistical. Scientific novelty: тhe terms of maintenance of chickens are studied in home gardens and farms, and also quality and safety of meat that is got directly in an economy. It is set that the complete comsumer of carcass in the conditions of economy promotes their bacterial semination. The estimation of indexes of quality and safety of hens carcasses that enter realization from home gardens and farms economies in the conditions of state laboratory veterinary sanitary examinations at the market is conducted. The veterinary sanitary estimation of carcasses is improved in the laboratories of veterinary sanitary examination. The microbiological method of meat safety determination is first offered with the use of infusorian of Colpoda steinii. Degree of introduction: methodical recommendations are worked out and offered on control of meat quality and safety of carcasses witch act to the markets from home gardens and farms, taking into account the sanitary-hygenic terms of maintenance and roughing-out of carcasses in the economies conditions. The hen carcasses comsumer method is improved, a patent is got on an useful model № 61407 from 25.07.2011 "Method of hen carcasses preparation for realization on agroindustrial markets".
