Essay

Object of research: hygiene and sanitation in the technology of honey production, organoleptic, physic-chemical, microbiological indexes and pollen composition of honey. Purpose of research: to study the influence of the sanitarily hygienic conditions of honey production, and its botanic origin on indexes it quality and safety. Methods of research: sanitary and hygienic, veterinary and sanitary, organoleptic, physic and chemical, microbiological, methodology NASSR. Scientific novelty: for the first time on basis of the complex scientific explorations is established influence of sanitary and hygienic conditions of honey production of different botanic origin on its indexes for quality and safety in Odessa area. For the first time is established, what behind inappropriate sanitary and hygienic conditions on apiary; it is rise the hazard of frequency and intensity of honey contamination by mesophilic aerobic and electively anaerobic microorganisms (MAFANM), microorganisms by mushrooms, yeast, BGKP, bacillus and spores of Clostridium botulinum. Perfection of sanitary-and-hygienic recommendations for introduction on an apiary on the basis of appropriate hygienic practice and system NASSR is scientifically proved. Degree of introduction: the project of the National standard Is introduced: DSTU Microbiological criteria for foodstuff. Manuals concerning and establishment of conformity. The general requirements, which is accepted to consideration 24.01.2012. Offers to manufacture are stated in "Methodical recommendations concerning an establishment of conformity to microbiological criteria of foodstuff and sanitary-and-hygienic conditions of production" аnd methodical recommendations concerning "Veterinary and sanitary condition of manufacture of honey bee on apiaries" and it is is offered to use by experts of laboratories of the Odessa, Kherson and Nickolaev areas and in microbiological department DNDILDVSE.
