The thesis presents the sanitary and hygienic substantiation of the method to disinfect dairy and milking utensils and milking parlour by the ozone and air mixture (OAM) containing different concentration of ozone. The optimum parameters of dairy and milking utensil treatment by OAM, the decrease in their bacterial contamination, the increase in milk quality have been determined, the economic efficiency of its use has been proved. The results of the laboratory investigation showed that after the treatment by OAM for 30 minutes the content of MAFAnM on the inner surface of the pipeline was 2,36 - 28,24 times as low as after the control treatment by the solution of the preparation "Dezmol". The use of the ozone and air mixture provides longer disinfecting action as compared to the action produced by chemical washing and disinfecting means. It has been stated that the optimum parameters of the pipeline treatment by OAM are: the ozone concentration - 18 mg/l; period of treatment - 30 minutes; expenditure of mixture - 1,0 l/min. The method of the dairy and milking utensil disinfection by OAM is more effective than the one with the use of the preparation "Dezmol": when the ozone concentration was 15 and 18 mg/l the content of MAFAnM on the inner surface of the teat cups was lower by 25,5 % and 17,6 times, the collector - by 2,9 and 47,8 times, the pipeline - by 4,1 and 27,1 times, the milk tubes - by 5,8 and 38,2 times. The disinfection of the pipeline by OAM exerted a positive influence on the sanitary and hygienic values of milk. The bacterial contamination of milk after OAM disinfection at the ozone concentration - 15 and 18 mg/l was 4,0 and 93,6 times as low as the indices after the use of the preparation "Dezmol" respectively. The ozone and air mixture is an effective method of the parlour disinfection, the degree of which depends on the ozone concentration and the period of exposition. The parlour air disinfection by OAM at the ozone concentration 10 - 15 mg/l for 10 - 30 minutes corresponds to the action of chemical washing and disinfecting means, when the dose is 15 - 20 mg/m3 for 60 minutes OAM completely disinfects mould, yeast, MAFAnM. The economic efficiency of the use of OAM for sanitary disinfection of dairy and milking utensils is 43,84 gryvnas per 1 centner of milk as compared to the use of chemical washing and disinfecting means.
