Essay

The dissertation is dedicades to veterinary and sanitary standartizing in the field of milk sanitation.In has been revealed that the bacterial phase,such as when microorganisms in milk received uhder production conditions do not propagate,does not exist.The process of propagation of milk microcnvironment begins right after milcing of the cows and pouring milk into tne grneral vessel.Tne speed of propagation depends on the level of initial microbiotic contamination of milk, cooling temperature and its bacteriostatic features.Tacing this phenomenon into concideration there has been determined an integrated there-in-one sanitary-and-hygienic standart of technologies of production and primary processing of milk:mmicrobes number of freshly produced whole milk 80 thousand cooling temperature +5±10C and preservation of it at the given temperature for no more than 24 hours.Microbiological criteria of sanitary treatment of milking equipmrnt efficacy have also been determined: the level of microbiotic contamina tion of the surfage contacting with milk can be no more than 500 cm -2 wint coli-titer of washings 1,0. A standart document "Veterinary-sanitation norms of milk production and processing technologies under requirements of the USS 3662-97". has been created,there has also been suggested a selective- diagnostic nourishing environment for determining of milk coli-titer and washings from milking equipment,which is more sensitive compared to the famous environments of this class.
