Essay

Object of research: peculiarity of stream microbiological and biochemical processes in the whole milk during its storage in a refrigerated, hygienic microbiological standards for receipt of whole milk extra quality and effectiveness of the sanitization of milking equipment and dairy equipment, course lipolytic process in whole milk at different temperatures of storage and content psychrotrophic microflora, how sanitary assessment of whole milk chilled for the content of free fatty acids. Purpose of research: determine experimentally and theoretically justify sanitary standards for refrigerated whole milk extra-class and milking equipment and develop veterinary and sanitary control system for milk production on dairy farms. Set psychrotrophic microflora role in the hygienic standardization system of whole milk microbiological safety and to develop effective methods for its determination. Methods of researches: Veterinary and sanitary, biochemical, physico-chemical microbiological, organoliptic and statistical. Scientific novelty: Sanitary standardization conception of whole milk extra sort is developed. In microbiological process of cold whole milk, where psychrotrophic microflora plays a dominant role, is established the occurrence of "phase of cryomicroflora". There is developed the environment "PM", which provide psychrotrophs determination in whole milk and elution from the details of milking accessories within 48 hours that fivefold faster than approved standard method. Motion of lipolitic process is studied in whole milk on the basis of contents of free fatty acids and influence on this process of both natively and microbal lipolytic enzymes are defined. Veterinary and sanitary criteria which characterize dependence lipolytic process from milk semination level by psychrotrophic microorganisms are defined. The psychrotrophic microorganisms which were educed from milking accessories and whole milk form dense biofilms on the abiotic surfaces of processing equipment at the temperature 4-6 C and which have persistence to cleaning agent is determinated. Degree of investigation: Developed control system of the milk production technological process, health and safety standards, evaluation methods of cooled milk, nutrient medium and microorganisms circuit identification are contained in the guidelines which are implementing in Ukraine. Range of application: are whole cow's milk production farms, dairy plants, laboratories of veterinary medicine, higher education institutions with such line of training specialists as "Veterinary Medicine" and "Food Technology and Engineering."
