Object of study: Sanitary and hygienic safety indices and quality of cows milk depending on the content of somatic cells.Purpose of study: to develop and to implement the practice of veterinary medicine of Ukraine of scientifically-based system of sanitary and hygienic evaluation of safety and cows milk quality by the content of somatic cells and the development of measures to effectively manage indicators. Methods of study: Assigned tasks in the work were solved with the help of using the hygienic, physical, biochemical, microbiological, organic and lactic, microscopic, cytological and statistic methods of search.Scientific innovation: It was got new facts due to the influence of sanitary and hygienic parameters in production of safe and qualitative cows milk, founded the control of the content of somatic cells in it. The morphological structure of somatic cells of milk and lacteal glands tissues at cows disease on sub clinic mastitis was studied. Dependence of the clinical composition of cows milk on the quantity of somatic cells in it was found out. For the first time it was established the correlative dependence between SCC. In cows, milk at sub clinic mastitis and their productivity. It is extended and expanded the excising classification of lacteal gland of cows by criteria SCC in milk and combined with microbiological indices. It was studied the morphological and ultra structural characteristics of somatic cells in milk and lacteal gland tissues of healthy cows and at disease of sub clinic mastitis. In ultrasonic level, it was confirmed that migration of somatic cells to alveolar milk at sub clinic mastitis causes the destructive changes in lactocytes and leads to milk productivity reduction.Level of introduction. On the basis of new scientific researches and practical techniques and improved methods of research it was carried out new scientifically and practical ways and improved methods of safety research andmilk quality, methodical recommendation, two SCC And three patents onuseful model.
